I typed up a turkey cupcake recipe yesterday but it is missing... I will try to type up some more...

Apple Pie
6 apples (granny smith or jonethon)
1/2 cup brown sugar
1/4 cup sugar
1 tsp. cinnamon
1/4 tsp. salt
2 tbs. all-purpose flour
Slice apples thinly. Combine dry ingredients. Toss apples and dry ingredients in a ziplock bag. (I let dd do this;)) Pour into unbaked, deep-dish pie shell. Top with criss/cross crust strips. Bake at 400 degrees for 45 minutes or until apples are tender and crust is slightly brown.
Let stand 15 minutes before serving allowing the juices to thicken.

Eggnog Muffins (This is great to fix for Christmas morning.:))
2 cups all-purpose flour
3/4 cup sugar
1 tbs baking powder
1/2 tsp salt
1 cup eggnog
1/4 cup water
1/3 cup butter, melted
1 egg, beaten
1 tsp vanilla extract
1/2 tsp nutmeg
1/2 tsp cinnamon
Preheat oven to 400 degrees. Combine flour, sugar, baking powder and salt in a large mixing bowl. In another bowl, combine remaining ingredients. Add liquid to dry ingredients and mix until just moistened. Pour batter into lined or greased muffin cups. Bake for 20 minutes. Makes 12 large muffins.

DD and I are making these tomorrow for the church Thanksgiving potluck. :))
Sweet Turkey Cupcakes
Cupcake
Chocolate frosting
3 oval shortbread cookies (Keebler Sandies Right Bites Shortbread)
6 to 10 candy corn pieces
White icing
Black decorators' gel
Red fruit leather (strawberry Fruit by the Foot)
1. Frost the cupcake, then press in a cookie head and 2 cookie wings.
2. Press in a row or two of candy corn tail feathers.
3. To make an eye, add a small dot of white icing to the head, then add a dot of black decorators' gel for a pupil.
4. For a beak, cut the white tip from a piece of candy corn and press it in place.
5. To make the wattle, cut a 1-inch square of fruit leather. Roll it into a tube and stick it in place over the beak.

This has been a Thanksgiving tradition to serve for the past six years.:)
Streusal-Topped Pumpkin Pie
1 (15 oz.) can pumpkin or 2 cups of pumpkin puree
1 (14 oz.) can sweetened, condensed milk
1 egg
1 1/4 tsp ground cinnamon
1/2 tsp each: ginger, nutmeg, salt
2 (6 oz.) graham cracker pie crusts
1/4 c firmly packed brown sugar
2 tbs. all-purpose flour
2 tbs cold butter or margarine
3/4 c chopped walnuts or pecans
1. Preheat oven to 425 degrees. Combine pumpkin, condensed milk, egg, 3/4 tsp cinnamon, 1/2 tsp ginger, 12 tsp nutmeg, and 1/2 tsp. salt. Mix well. Pour into pie crust.
2. Bake 15 minutes. Then remove pies from oven and reduce heat to 350 degrees.
3. Combine sugar, flour, and remaining 1/2 tsp cinnamon; cut in butter until crumbly. Stir in nuts. Sprinkle streusal mixture over pies.
4. Bake 40 minutes or until set.
5. Serve warm or at room temperature. Whipped cream optional. Refrigerate leftovers.
